Lemon Bars
Crust Ingredients
- 1 1/2 cups flour
- 1/2 cup powdered sugar
- 3/4 cup (1 1/2 blocks) cold margarine or butter
Directions:
- Combine flour and powdered sugar. Cut in margarine or butter until crumbly.
- Press onto bottom of lightly greased 9 x 13-inch pan.
- Bake at 350℉ for 15 minutes or until golden brown.
Topping Ingredients:
- 4 eggs, slightly beaten
- 1 1/2 cups sugar
- 1 tsp baking powder
- 3 tbsp flour
- 1/2 cup lemon juice
Directions:
- While crust is baking, combine topping ingredients and mix well.
- Pour over baked crust (no need to let crust cool) and return to oven.
- Bake 20 to 25 minutes or until golden brown. Cool, cut into bars, and store in refrigerator. (Optional: Sprinkle with powdered sugar)
Butter Mochi
Ingredients
- 1 pound (16-ounce box) mochiko
- 3 cups sugar
- 1 tbsp baking powder
- 1/2 cup butter or margarine
- 5 eggs beaten
- 1 tsp vanilla
- 1 can (12 ounce) coconut milk
Directions:
- Melt butter and set aside to cool.
- In a large mixing bowl, combine all ingredients. Mix until batter is smooth.
- Pour into well-greased 9 x 13 inch pan.
- Bake at 375℉ for 1 hour or until toothpick comes out clean.
- Cool and cut into squares.
